Performance: A high-quality hard flour similar to low-protein European-style flour, unbleached and unbromated, with high elasticity and fermentation endurace; high water absorption; and less gluten for crisper crusts and irregular hole structures. Ingredients: Wheat flour enriched (niacin, reduced iron, thiamin mononitrate, riboflavin, folic acid), malted barley flour, and ascorbic acid added as a dough conditioner. By far the best artisan flour I have used - I like it better than King Arthur & what is available at our coop. The price is reasonable; shipping is prompt; product is fresh. I make @ 6 loaves every other week with Northwest Sourdough starter, which performs well with this flour. Friends and neighbors are delighted with a loaf of consistently crispy-on the outside, airy-soft & chewy-in the middle goodness. Day old slices make wonderful French toast. I'm going to sell these at our local Farmers' Market.

I've been using this four for a couple of years now and have had the most consistent results for any patent flour for hearth breads. Quality is consistent order to order and shows in the consistent results
