Rye Flour is milled from a hardy cereal grass, rye flour contains less gluten (protein) than all-purpose or whole-wheat flour. For that reason, it won't produce a well-risen loaf of bread without the addition of some higher-protein flour. Rye flour is also heavier and darker in color than most other flours, which is why it produces dark, dense loaves. There are several different types of rye flour, the most common of which is medium rye flour, available in most supermarkets. Light or dark rye flours, are available from Honeyville Food Products.
Rye Bread Recipe
Ingredients:
Directions:
- Disolve yeast in warm water.
- Combine milk, sugar, and salt in a large bowl. Beat in molasses, butter, yeast mixture, and 1 cup of dark rye flour.
- Use a wooden spoon to mix in the remaining rye flour. Add bread flour until dough is stiff.
- Knead 5 to 10 minutes, adding flour as needed.
- Cover dough and let rise 1 to 1 1/2 hours or until dough doubles in size.
- Punch down and divide to form 3 round loaves. Let loaves rise on a greased baking sheet until double.
- Preheat oven to 375 degrees F. Bake for 30 to 35 minutes. Enjoy.
