Honeyville's Dehydrated Sliced Celery are produced in a process where moisture is removed from fresh celery in a special drying process. The end product weight is reduced by over 90%, while the volume stays the same. This remarkable process concentrates the fresh celery taste, natural color, and texture of fresh celery in it's dehydrated state. When re-hydrated with water the product will maintain the texture and shape of fresh celery, with no shrinking or shriveling.
Freeze Dried and Dehydrated products are less expensive than wet pack food because you are not paying for all the water. The taste is great, and the nutritional food value is excellent. Freeze drying provides natural and additive free fruits and vegetables to be stored effectively for long periods of time. Remember Honeyville's Freeze Dried and Dehydrated fruits are stable products with a long shelf life without additives or preservatives. Each 1 pound can contains about 40 1/4 cup servings of Dried Celery.
Shelf Life: Dried Celery may be stored in the sealed #10 can (with included oxygen absorber packet) for 10 to 15 years under ideal storage conditions (a cool, dry place).

Same review for both the carrots and the celery

I just recently opened the cans of dehydrated carrots and celery, as it's now soup-making season! I don't particularly like the taste of carrots or celery; however, I find their color essential in the ham shank and white bean soup I make each winter. I used to buy fresh carrots and celery and dice them as small as possible so the taste would be minimal to me. The dehydrated vegetables from Honeyville worked just perfectly for my purposes. The carrots and celery both hydrated to a nice size and the taste did not overpower the soup, but added just the right amount of character in taste, texture and color. No more buying bunches of carrots or celery only to use the smallest portion of each. I can hardly wait to try the corn next!

The dehydrated celery is good to use in stews, soups, foods that contain plenty of liquid and longer cooking, but I find it to be tough and bitter tasting when used rehydrated, raw, in salads. I believe it might not be bitter if the celery leaves wheren't included. I enjoy tuna and egg salad sandwiches with finely chopped celery stalk, but this product just doesn't work.

I was a tad bit dissapointed to open this can after opening the dehydrated onions. The pieces are relatively small (what can you expect since celery is mostly water!) and I didn't feel that they rehydrated perfectly. Now, saying that...I still continue to use these for certain applications. They are great in soups, dressings etc. I find that I like larger fresh chopped for my roasts. However, that is personal preference. I can say that they do the job and I will continue to purchase them for long term food storage.

I use this product for anything that calls for sliced celery, even potato salad. It is an excellent product. It tastes great, looks great, and best of all, so easy to use!

I like to keep these on hand for making soups, or dressing for the holidays or anytime of the year. They are part of the vegetable combo pack you can buy, and I highly recommend them all.
