Honeyville Freeze Dried Celery is produced in a process where moisture is removed from the product using a very low temperature and a vacuum. Only about 3 percent moisture remains in the product
at the time of packaging. The end product weight is reduced by over 90 percent, while the volume stays the same. This remarkable process concentrates the fresh taste, natural color, and texture of celery.
When rehydrated, the product will absorb the liquid and resemble fresh celery once again. The taste is great, and the nutritional value is preserved. Freeze drying provides natural and additive
free vegetables to be stored effectively for long periods of time. Honeyville Freeze Dried Celery is an ideal product for long term food storage and emergency preparedness.
Shelf-Life: Freeze Dried Celery will store for 10 to 15 years in a sealed #10 can (oxygen absorber included) under ideal storage conditions (cool, dry place).
Instructions: Add 3 parts water to 1 part celery. Allow Freeze Dried Celery to hydrate for about 20 minutes or until fully rehydrated.
Uses: Freeze Dried Celery can be used separately or in combination with soups, casseroles, stews, seasonings and more.

Good in scrambled eggs

My family and I like vegetables etc in our scrambled eggs. I have found that I can place the freeze dried celery, spinach, onion, asparagus, zucchini in a cup, add water, I do not cover them, but use just enough so that as they are periodically pushed into the water, they rehydrate nicely. I usually let them set for 5-10 mins. Then scramble up the eggs and add the veggies, liquid and all. Then go ahead and scramble them up. I have also used these in soups and stews,which require a bit of cooking time and they are quite good.

These will not produce fresh celery when rehydrated. But they are great for adding flavor and texture to soups and stews.

Celery tough and rubbery!

So far this celery is the only thing I have found from Honeyvile that I don't like. It is tough and rubbery when cooked, even when rehydrated first. If anybody has any ideas on how to use it or what to do with it, I'm open to suggestions!
