Uses: Honeyville's HGI High Gluten Flour is used in breads, Kaiser Rolls,bagels, hearth breads, French breads, Italian breads, hard rolls, specialty breads, pizza crust, sub buns and croissants, where a high quality, high gluten flour product is required.

Performance: High quality, high protein spring wheat flour. Provides excellent fermentation tolerance, absorption, and strength. Works well in straight doughs, sponge doughs and frozen doughs.
