Honeyville's Hi-Maize Resistant Starch is a starch that can be used to increase the nutritional value of the foods you love. Hi-Maize 260 can be added to almost any food without changing the taste or appearance. Just 15 grams of Hi-Maize contains 9 grams of dietary fiber, which is twice as much fiber contained in 1 cup of oatmeal. Hi-Maize gets its natural dietary fiber from corn. Honeyville Hi-Maize Resistant Starch is an ideal product for your baking needs.
Shelf-Life: Hi-Maize Resistant Starch will store for 2 years in a sealed 5 pound bag under ideal storage conditions (cool, dry place).
Instructions: Replace about 10% to 25% of the flour the recipe requires with Hi-Maize Resistant Starch.
Uses: Hi-Maize Resistant Starch is used to improve the nutritional value of products, including cookies, pancakes, smoothies, cereals and more.

I have ordered Hi-Maize 260 Resistant Starch several times from Honeyville. I use it daily in my protein shakes and when I bake. I would have given a rating of 5-stars, but realized it is not gluten free like the King Arthur brand. This is a wonderful product, especially when it is gluten free for people avoiding wheat or eating gluten free as it provides the fiber lacking in most gluten-free flours. Please consider providing this from a gluten-free facility.

Claims of increasing satiety are valid. Hi-maize 260 is taste neutral, e.g., my wife's multigrain bread made with Hi-maize 260 won Best-of-Show at the 2012 Gillespie County Fair.

I used Hi-Maize to boost the fiber in this Cinnamon Bread to 8.5 grams of fiber PER SLICE!!! It baked up fluffy and rose beautifully. SO happy to have access to this product. WONDERFUL!!!

Love Hi-Maize. It add it to my homemade bread recipe -- it makes the bread very crispy - excellent toasted. Also, I'm not as hungry when I eat bread made with Hi-Maize. I'm on a weight loss program and I believe it's helping me to lose more weight.

I ordered a 50lb bag as I have a large family and my parents live down the road. Initially, I intended to order more of the smaller bags, but chose the bigger for the cost effectiveness.
I had no idea what to expect of the product itself... I mistakenly assumed something a bit more "grainy" ... however the consistency of Hi-Maize is just like cornstarch! I'm not suggesting that this is bad (in fact, it will be great for the actual recipes), but pouring 50lbs of "cornstarch" into a container is a bit, um, DUSTY! It is soooo finely ground, that it ended up in a lot of unintended places. The kids thought it was great ... and I'm certainly NOT complaining. Just wanted to forewarn anyone else that might think a simple task to divide up the bag... Not at all impossible, just a little more work than initially intended.
Looking forward to actually using some soon ... and will report back when I do. Thank you, Honeyville for the great looking recipes specifically for Hi-Maize.
