Dehydrated Carrots!

The quality of dehydrated foods has come a long way just in the past several years - and this product proves it. I have tried dehydrated carrots in the past and they always tasted very "off", so we gave up on them. I ordered Honeyville's Puff-Dry Dehydrated Carrots because Chef Tess always raves about them in her blog - sure enough, she was right! This is an excellent product, really tastes like fresh carrots, rehydrates beautifully, and is quite versatile. I pop them into everything from soups, stews, spaghetti sauce, sloppy joes, tacos, egg dishes, bean pots, to baked goods. I often make a quick mirepoix (celery, onions, & peppers) and add carrots using all Honeyville dehydrated ingredients - just pour boiling water over 1/4 cup of each and let steep while you prepare the rest of your recipe. Easy and very good! If you haven't tried them, or have tried other dehydrated carrots and didn't like them, I encourage you to try these.

Good for cooking, not as good as a side dish

Like many dehydrated foods (some exceptions, of course), these are very good used in cooking recipes (soups, stews, casseroles, etc). We don't like them that well as a straight side dish, though. Note that these are very small dices. We'd prefer slices or larger dices in our recipes.

I use this on salads in stir fry and almost all my cooking where a whole carrot is not required or I can substitute and I notice no difference in quality or taste.

Carrots!

Of all the freeze dried/dehydrated veggies on this site, these are my absolute favorite (of the ones I've tried, and I haven't tried them all yet). The carrots smell great even dehydrated, and cooked up turn out wonderful. I haven't tried to do a side by side comparison, but I do believe they compare closely. I'm actually here to order more.

Same review for the carrots and the celery

I just recently opened the cans of dehydrated carrots and celery, as it's now soup-making season! I don't particularly like the taste of carrots or celery; however, I find their color essential in the ham shank and white bean soup I make each winter. I used to buy fresh carrots and celery and dice them as small as possible so the taste would be minimal to me. The dehydrated vegetables from Honeyville worked just perfectly for my purposes. The carrots and celery both hydrated to a nice size and the taste did not overpower the soup, but added just the right amount of character in taste, texture and color. No more buying bunches of carrots or celery only to use the smallest portion of each. I can hardly wait to try the corn next!

Great product. I mix a scoop of these with a scoop of the dried peas and cook together. Very nice. I am disabled and it's a real chore to keep fresh vegetables on hand for just one person so using dried veggies is a good choice for me.

These dried carrots are excellent to keep on hand in your pantry for soups or brown rice pilaf. They cook quickly, and taste great.
